2 Tbsp ground flax seed
6 Tbsp water
16 oz jar of crunchy peanut butter
1 banana, mashed
1/2 cup brown sugar, packed
2 tsp baking soda
1. Preheat oven to 350.
2. Microwave flax and water in 30 sec intervals until you get a gel-like consistency (this is your "egg")
3. Mix all ingredients together
4. Drop spoonfuls onto an ungreased cookie sheet (they don't spread, so line 'em up close!)
5. Bake for 9-10 min (12 min for a crunchier cookie)
Makes 24 cookies!
*For a sweeter option, try throwing in a 1/2 cup of vegan chocolate chips!
